Spaghetti Carbonara with chicken

I don’t know why it took me so long to try making Spaghetti Carbonara, I guess I had such high expectations I was surprised it turned out so well and was so easy to make, and cheap as well for about 13€ for 4 very hearty meals.

Spaghetti Carbonara with chicken

Very easy and tasty recipe for all pastafarian out there.

Ingredients
  • 500 grams Spaghetti
  • 300 grams Smoked Streaky Bacon
  • 2 boneless chicken breasts
  • 2 cloves Garlic
  • 2 large Eggs
  • Black pepper
  • Oregano
  • Thyme
  • Salt
  • 200 grams Fresh Parmesan cheese
Spaghetti Carbonara with chicken Instructions

1. Dice the chicken fillets and cook in a frying pan with a bit of oil and some spices such as oregano and thyme. When done, set the chicken aside in a container.

2. Now time to prepare the bacon, dice finely and fry with a little oil for two minutes until the fat begins to melt, then add the cloves of garlic and cook for another 5 minutes. When the bacon starts to get crispy, lower the heat to minimum and mix in the chicken pieces.

3. Time to start cooking the spaghetti. Bring some water to the boil and stir in the pasta, cooking over moderate heat for about 8 to 10 minutes.

4. Let's prepare the egg mixture in the meantime. Break the eggs into a big bowl and beat them with a fork for about a minute. Grind pepper (to taste) and also a bit of salt.

5. When the pasta are cooked, drain them and transfer them immediately to the bowl with the eggs mixture stirring with a spatula. Then add the chicken and bacon pieces and sprinkle about half of the parmesan. The other half would be grated at the table when served.

During a trip to China, in Yangshuo, I joined a cooking class at Cloud 9 Restaurant. Here are some pics including one of the crazy chef in action.

Anyway, I learnt to make a really nice recipe of one of my favourite Chinese dishes, sweet and sour pork. Today I’ll be making a slightly different variant with added chicken and different vegetables (bell pepper instead of tomato and cucumber). I hope you like it :)

Typical Chinese dish very sought after by foreigners.

Ingredients
  • 2 Boneless Pork loin chops
  • 1 large Boneless chicken fillet
  • 1/2 tablespoon Salt
  • 1/2 tablespoon Rice wine
  • 20 grams Pineapple
  • 1 large Bell pepper
  • 1 Egg yolk
  • 200 grams Bread crumbs
  • 1/2 teaspoon Custard powder
  • 3 tablespoons Corn starch
  • Sunflower oil
  • 3 tablespoons Sugar
  • 2 tablespoons Vinegar
  • 2 tablespoons Ketchup
Sweet and Sour Pork and Chicken Instructions

1. Season the pork with 1/2 tablespoon salt, 1/2 teaspoon rice wine, one egg yolk and half teaspoon custard powder, all mix together.

2. Add in 2 tablespoon corn starch, mix together, the meat should not be too dry with a little liquid.

3. Double dip the meat with 200g of breadcrumbs

4. In a wok, heat oil until very hot, lower heat then piece by piece put the meat in then deep fry until golden color (around 30 sec each side), then set the meat aside in a separate dish.

5. In a bowl, make the sweet and sour sauce: 3 tablespoons of sugar, 2 tablespoons of vinegar and 2 tablespoons of Ketchup.

6. In the wok, bring back to high heat and stir in the sauce. Taste the sauce and adjust seasoning if needed.

7. When the sauce starts boiling, put in the vegetables and the pineapple, add corn starch to thicken the sauce, turn off the fire and add in the meat.

Gubbeen is an Irish cheese which, although naturally smoked is also produced under a smoked variant which greatly pair up with the chicken in this hearty recipe.

Gubbeen is an Irish cheese which, although naturally smoked is also produced under a smoked variant which greatly pair up with the chicken in this hearty recipe.

Ingredients
  • Chicken marinade
  • 50 grams Honey
  • 50 grams Dijon mustard
  • 1 lemon
  • Vegetables pan
  • 10 grams butter
  • 400 grams mushrooms
  • 3 bell peppers
  • Chicken pan
  • 1 dash olive oil
  • 1 pinch pepper
  • 1 pinch paprika
  • 1 pinch salt
  • 4 slices bacon
  • 50 grams smoked gubbeen
  • 4 branches parsley
Smoked cheese chicken and vegetables Instructions

In a food processor or a mixer, combine all ingredients of the chicken marinade and process for about 20-30 sec until well blended.

Place chicken breasts in a tray (if bought from supermarket, keep the plastic one to save you some washing-up) filled with the marinade and put in the fridge, covered, to soak for at least 2h.

In a deep pan over high heat, place the butter and sauté the mushrooms with the bell peppers.

In a frying pan over high heat, drizzle the olive oil. After removing the chicken from its marinade tray, cook on all sides until lightly brown alongside with the bacon.

Transfer marinade to a small container or bowl and reserve to serve for later.

Season the chicken with pepper, salt and paprika.

Pre heat the oven at 190 degrees.

Transfer the chicken, bacon and vegetables to a baking dish or tray and spread out the smoked cheese over each chicken breasts.

Cook for about 20min

Sprinkle each breast with the parsley before serving and pour a little of the reserved marinade on the side.

Thai soups: Tom Yum and Chicken coconut

Tonight, I felt for some spicy Thai soup. I originally aimed just for the Tom Yum but had materials for the other one too so I multitasked a bit. Enjoy, hope you’ll find it Aroi dee (“good” in Thai) like me.

Chicken Panang

Although I’m off to Thailand for 3 weeks in less than a week, since I tasted the Creamy Red Thai Chicken Panang at the Silk Thai in Cork, I wanted to try it myself. Well, it definitely was of the red curry variety but I still was missing the creamy part. The good news is, it’s incredibly easy and, at lest that’s what I found with all Thai curries, hard to fail as more or less all the ingredients go in the pot at the same time.

So today I tried the recipe linked at the end of this post but customizing it somewhat. Firstly, I did not find proper Panang curry paste so instead I mixed Satay paste with Red Thai curry to try to reproduce this delicious peanut taste and added some Kefir leaves.
I also added, red, green and yellow peppers but I think you could add many vegetables to empty your fridge and to your liking :)

With those portions, you got enough for about 4 meals I’d say.
