Thai soups: Tom Yum and Chicken coconut

Tonight, I felt for some spicy Thai soup. I originally aimed just for the Tom Yum but had materials for the other one too so I multitasked a bit. Enjoy, hope you’ll find it Aroi dee (“good” in Thai) like me.

Guacamole

I really recommend this recipe which has nothing in common with guacamole you can buy in a supermarket. I did this as part of a semi home-made fajitas dinner!

Add to this salsa sauce, sour cream and tortillas from your local supermarket, cook some chicken strips with peppers and voilà !

Mansaf, Jordan’s national dish: Lamb in Spiced Yogurt Sauce with Rice and Bread

Mansaf is the national dish of Jordan usually served as a community dish by the beduins. I’ll always remember the mountain of rice, pine nuts and spicy lamb being shared with at least 30 people from this beduin tribe, eaten by hand using a piece of bread, a real fest!  This is a simplified version of this delicious dish. Although I can’t compete with such quantities, give it a try. It does not take too much prep time but does require a bit a few hours to marinate.
